Coffee Cream Filling

Coffee Cream Filling

Ingredients & Amounts

  • 4 tbsp ground coffee
  • 2 cups of milk
  • 3 egg yolks
  • 1/2 cup of granulated sugar
  • 1/2 cup of all-purpose flour, sifted
  • 1/2 tsp vanilla extract

Instructions

  • Boil the milk and ground Jamaican Blue Mountain Coffee in a saucepan
  • Leave to steep, covered for 7-9 minutes
  • Strain to remove any coffee granules
  • Return to saucepan and simmer
  • Whisk together sugar and egg yolks until the mixture is pale yellow
  • Gradually add the sifted flour and mix well
  • Add the mixture of simmering coffee and mix well
  • Pour the compete mixture into the saucepan and continually whisk until smooth and thick
  • Remove from heat and pour the mixture into a bowl
  • Let it cool
