
Ingredients & Amounts
- 4 tbsp ground coffee
- 2 cups of milk
- 3 egg yolks
- 1/2 cup of granulated sugar
- 1/2 cup of all-purpose flour, sifted
- 1/2 tsp vanilla extract
Instructions
- Boil the milk and ground Jamaican Blue Mountain Coffee in a saucepan
- Leave to steep, covered for 7-9 minutes
- Strain to remove any coffee granules
- Return to saucepan and simmer
- Whisk together sugar and egg yolks until the mixture is pale yellow
- Gradually add the sifted flour and mix well
- Add the mixture of simmering coffee and mix well
- Pour the compete mixture into the saucepan and continually whisk until smooth and thick
- Remove from heat and pour the mixture into a bowl
- Let it cool
